me: made? no. I buy it though... why?
Lori: I want to make it, and found billions of recipes online and they're all different, and I don't know what the best one is. and you're my domestic goddess, so i thought I'd ask :)

If I may interject (I'm a culinary student) a very basic recipe:
1 cup soy sauce
1 cup mirin
1/4 cup brown sugar
2 tbl ginger, minced
It's great for a marinade and then you can boil and reduce it as a sauce. Just make sure if you are using it as a marinade first that you actually BOIL it to reduce cross contamination of some pretty nasty chicken disease!
What in heaven's name is mirin?
yes - what is mirin? and i was going to use it for tofu, so the hypochondriac in me can disregard your warning, correct? (though i do wholeheartedly appreciate the warning, nonetheless.)
Mirin is really close to rice wine vinegar. In fact if you can't get ahold of mirin you could probably substitue it. Although it's a beautiful thing so I'd encourage to look for. You can disregard the warning, tofu is a deliciously blood free protein!
I have rice wine vinegar! I inherited it when Jules moved. Was wondering what the hell it was used for...
